Monthly Focus – Grill Cleanliness
Grill Cleaning Grill cleanliness continues to be a challenge in many restaurants especially with sales volumes so high. We are seeing an increased level of callouts for the grill. Many callouts still have 0 parts fitted that require gap re-calibration. We are also seeing parts fail where lack of cleaning could have enhanced this failure.
In most circumstances these callouts are due to carbon build up on the grill or excess water due to poor cleaning. It is imperative that the daily grill cleaning is completed thoroughly. Grill cleaning cards can be found on the Intranet Grill Support Cleaning the grill after every Run as per the guidelines must be re-enforced in your restaurant to reduce unnecessary callouts Typical issues seen which are due to lack of cleaning: • Undercooking due to grease/carbon build up on the grill surfaces and release sheets, reducing heat transfer efficiency • Extended cook times to compensate for poor heat transfer ( remember there is no maximum cook times and not all platens will be able to cook on minimum cook times ) • Grill tripping due to incorrect cleaning procedures which has flooded grill parts. ACTIONS Review grill cleanliness in your restaurant to minimize callouts by ensuring: • Daily clean is completed correctly • Grill recovery clean is completed at least quarterly and more frequently if required.
